Notre troupeau est compos\u00e9 de 30 vaches laiti\u00e8res de race abondance (race-rustique des Alpes) et de 20 g\u00e9nisses de z\u00e9ro \u00e0 trois ans, pour assurer le renouvellement. Ce cheptel nous permet la production de 120000 litres de lait par an, transform\u00e9s en totalit\u00e9 en fourmes, soit environ dix tonnes de fromage.<\/p>

Nos b\u00eates sont majoritairement nourries \u00e0 l’herbe. En fonction du niveau de production (plus de 15 litres de lait par jour et par vache), chaque vache sera susceptible de recevoir un compl\u00e9ment de c\u00e9r\u00e9ales et de colza pour assurer un bon \u00e9quilibre alimentaire (glucides\/prot\u00e9ines).<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t

\u00ab\u00a0N\u00e9 \u00e0 Clermont-Ferrand, je me suis rapidement orient\u00e9 vers le milieu agricole en reprenant dans un premier temps l’exploitation de mes oncles (exploitation foresti\u00e8re et vaches \u00e0 viande). Apr\u00e8s une p\u00e9riode de travail compl\u00e9mentaire (\u00e9change de services dans nos exploitations respectives) avec Laurent, l’id\u00e9e de nous associer afin de d\u00e9velopper la fourme fermi\u00e8re a vu le jour. Venu du d\u00e9partement voisin, \u00ab\u00a0la Loiere\u00a0\u00bb, pour un stage de 15 jours en classe de terminale, un contrat de saisonnier pour d\u00e9couvrir l’estive, Romain a encha\u00een\u00e9 par un BTS de gestion d’exploitation en alternance sur notre ferme. Notre ferme s’anime autour d’une \u00e9table avec un stockage de foin, de c\u00e9r\u00e9ales et de paille, d’une fromagerie, d’une cave pour l’affinage et le stockage des fourmes. Autour de ce b\u00e2timent, nous disposons d’une quinzaine d’hectares pour les p\u00e2turages d’automne et de printemps.<\/p>

En p\u00e9riode d’estive (de mai \u00e0 octobre), les vaches p\u00e2turent sur les Hautes Chaumes. Pour la traite, nous disposons d’un chariot de traite et d’une fromagerie en jasserie. Ces installations nous permettent de d\u00e9placer le troupeau en fonction de la qualit\u00e9 de l’herbe et des p\u00e2turages.<\/p>

Sur ces p\u00e2turages d’altitude, et en alternance chaque ann\u00e9e, nous faisons les foins. Nous avons fait ce choix pour deux raisons : d’une part, les terrains de Valcivi\u00e8res\u00a0 ne sont pas m\u00e9canisables car trop accident\u00e9s; D’autre part, la diversit\u00e9 et la richesse floristique des parcelles des Hautes Chaumes concourent \u00e0 la qualit\u00e9 du lait pendant l’hiver.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t
