La fourme<\/h1>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

La fourme est un fromage de vache au lait cru, dont la p\u00e2te fondante est finement persill\u00e9e. Sa cro\u00fbte est \u00e9paisse et longuement travaill\u00e9e par le temps. De forme cylindrique, la fourme mesure 22cm de hauteur et 13cm de diam\u00e8tre.<\/p>

Nos fourmes sont d’une \u00e9tonnante richesse aromatique de part nos pratiques agricoles et fromag\u00e8res. Par ailleurs, selon les saisons, les p\u00e2turages et les al\u00e9as d’une fabrication fermi\u00e8re, nous disposons au sein de notre production, des fourmes plus ou\u00a0 moins bleues, fondantes, acides et piquantes.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t

Au coeur du Parc Naturel Livradois-Forez, \u00e0 mi-chemin entre Saint-Etienne et Clermont-Ferrand, se trouve une petite commune de 200 habitants: Valcivi\u00e8res.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

Traditionnellement, dans le Forez, les paysans partageaient leur vie entre deux habitats : en hiver ils vivaient dans la vall\u00e9e et en p\u00e9riode estivale, ils montaient sur le plateau des Hautes Chaumes.<\/p>

L’\u00e9t\u00e9, chaque membre de la famille a son r\u00f4le \u00e0 jouer dans la bonne marche de la ferme. Les femmes, les enfants et les vieillards des diff\u00e9rentes familles se retrouvent en estive afin de s’occuper des b\u00eates, de la traite et de la fabrication du fromage. Tandis que les hommes restent dans la vall\u00e9e pour s’occuper des travaux des champs.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t

En \u00e9t\u00e9, la production de lait \u00e9tant plus abondante, il est alors n\u00e9cessaire de trouver un moyen de conservation ad\u00e9quat. La fourme, fromage au lait de vache est n\u00e9e de cette transformation du lait en estive. Cette technique a tout d’abord permis de constituer des r\u00e9serves pour l’hiver puis tr\u00e8s vite, devient une activit\u00e9 commerciale \u00e0 part enti\u00e8re.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t
